Ramen is a noodle soup that was originally imported to Japan from China in the Meiji Period. In more recent decades, it has become a very popular dish in Japan, adapted to the Japanese taste. Ramen restaurants (ramen ya) number in the thousands, and instant ramen (invented in 1958) is popular both in and outside of Japan.

1. First cut the saury into quarters; shake on salt, pepper and then the sake.
2. Lightly cover with flour and fry. Use a regular frying pan with much oil instead of a deep-fryer for better results.
3. Cut the squared shaped Hanpen into halves making them triangular, and then carve-in a slice in the middle to put in the fried saury.
4. Once the saury is fried and much of the oil has been wiped off; wrap the Ooba around the saury and inset into the hanpen.
5. To finish lightly brown both sides of the hanpen saury sandwiches using a frying pan lightly covered with butter and Olive oil.
* Squeeze on lemon or pour ponzu for accentuate the dish.
